Excel form to intake metabolic and physiological data

I have a large excel sheet that is already pre-formatted with some documentation based on inputs on a "data" tab. However, I also import tables from my metabolic cart and a separate heart rate variability app. Once imported, I need to manually work with the data to create the charts because some athletes go shorter and others go longer, so I'm always adjusting the input row length based on their test duration.
I'm looking for a solution where I can paste these CSV tables into one excel document, set a few parameters (e.g., I want the "time" column auto-split into 3 minute segments, or 4 minute segments, etc.) and then I want that data pulled so I can get a minute by minute average, plus stage average for every 1, 3, or 4 minutes, whatever time length I specify.
I would like to have this all work in one document with as many tabs as it takes, but it's more about the input. Once I can have the sheet "ingest" the data quickly with my specified parameters, I can more easily take that and put the results into the necessary documentation for review with the athlete.
The attached screenshot is one of the tables that I would like to have ingested into the sheet. There would be a total of likely 2 or 3 separate large pieces to ingest like this.
