Shopify theme edit to disable automatic variant selection

A widely known issue with Shopify has been that when your product has multiple variants, the first available variant is always selected by default. There has been some solutions for stores using dropdown menu's, but not much for stores using colour swatches as the variant selections.
We are using the default theme - Impulse. The issue can be demonstrated on their demo

As you can see, the colour and SIZE (XS) is chosen by default. This causes issues if the first option doesn't have stock, and then you can't choose another option.
