Screen recording / Youtube upload HQ

I need to:
1. Take a video (screen recording or any other method that provides HQ results) of a book that is uploaded to AnyFlip (see example: [login to view URL]) this is only an example, not the actual video, but it's similar.
2. Add intro and ending (will be provided)
3. It needs to look HQ on youtube. The problem I am facing is that 720p and 1080p look great, but 360p looks absolutely blurry, pixelated and becomes unusable.
I need someone that knows video edition and youtube enough to correct the problem, improve this and make the 360p youtube version look acceptable.
